Vegetarian Stuffed Bell Peppers
Instructions:
  1. Preheat the oven to 180°C.
  2. Cook the brown rice according to package instructions.
  3. Cut the tops off the bell peppers and remove the seeds.
  4. In a pan, heat olive oil over medium heat. Add chopped onion and garlic, sauté until soft.
  5. Add chopped tomatoes, black beans, cumin, paprika, salt, and pepper. Cook for 5 minutes.
  6. Mix in the cooked rice and half of the cheese. Stir well.
  7. Stuff each bell pepper with the mixture and place them in a baking dish.
  8. Sprinkle the remaining cheese on top of each stuffed pepper.
  9. Bake in the oven for 25-30 minutes until the peppers are tender.
  10. Garnish with chopped cilantro before serving.
