Vegetarian Baked Ziti with Spinach and Ricotta
Instructions:
  1. Preheat the oven to 180°C.
  2. Cook the ziti pasta according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent.
  4. Add spinach to the skillet and cook until wilted. Season with salt and pepper.
  5. In a large bowl, combine ricotta cheese, half of the mozzarella cheese, and half of the parmesan cheese. Mix in the cooked spinach mixture.
  6. In a baking dish, spread a layer of marinara sauce on the bottom. Add half of the cooked ziti pasta.
  7. Spread the ricotta-spinach mixture over the pasta. Top with remaining ziti pasta.
  8. Pour the remaining marinara sauce over the top and sprinkle with remaining mozzarella and parmesan cheese.
  9. Bake in the preheated oven for 25-30 minutes until the cheese is bubbly and golden brown.
  10. Garnish with fresh basil before serving.
