Vegan Moroccan Lentil Stew
Instructions:
  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and sauté until translucent.
  3. Add minced garlic and cook for another minute.
  4. Stir in chopped carrots, celery, and red bell pepper; cook for about 5 minutes.
  5. Add canned tomatoes and vegetable broth to the pot.
  6. Rinse lentils and add them to the pot along with cumin, coriander, paprika, cinnamon, salt, and black pepper.
  7. Bring to a boil, then reduce heat and simmer for about 30 minutes or until lentils are tender.
  8. Stir in spinach and cook until wilted.
  9. Adjust seasoning as needed before serving.
