Preparation Time: 45 minutes
Instructions:
- Preheat the oven to 180°C.
- Cut the tops off the bell peppers and remove the seeds.
- Dice the zucchini and onion finely.
- In a pan, heat olive oil over medium heat. Add onion and garlic, sauté until translucent.
- Add ground beef to the pan and cook until browned.
- Stir in diced zucchini and tomato paste, cook for another 5 minutes.
- Add cooked rice, parsley, salt, and black pepper to the mixture. Stir well.
- Stuff each bell pepper with the beef mixture.
- Place stuffed peppers in a baking dish and cover with foil.
- Bake in the preheated oven for 30 minutes.
- Remove foil and bake for an additional 10 minutes until peppers are tender.
