Instructions:
- Preheat oven to 180°C.
- Cut the tops off the bell peppers and remove seeds.
- Cook brown rice according to package instructions.
- In a pan, sauté chopped onion and jalapeno until soft.
- Add black beans, diced tomato, cumin, and coriander to the pan.
- Mix cooked rice with the bean mixture.
- Stuff the bell peppers with the rice and bean mixture.
- Place stuffed peppers in a baking dish and bake for 30 minutes.
- Serve hot.
