Spicy Eggplant and Chickpea Curry
Instructions:
  1. Heat olive oil in a pan over medium heat.
  2. Add chopped onion and garlic, sauté until golden.
  3. Add diced eggplant and cook for about 5 minutes.
  4. Stir in curry powder and cook for another minute.
  5. Add chopped tomatoes and chickpeas, mix well.
  6. Pour in coconut milk, bring to a simmer.
  7. Cook for about 20 minutes until the eggplant is tender.
  8. Season with salt to taste and serve hot.
