Instructions:
- Peel and cube the butternut squash.
- Boil the squash in salted water until tender, about 15 minutes.
- Drain and blend the squash with a touch of butter until smooth.
- Season the purée with salt and pepper to taste.
- Heat olive oil in a pan over medium-high heat.
- Sear the scallops for about 2 minutes on each side until golden brown.
- Remove scallops from the pan and set aside.
- In the same pan, add minced garlic and sauté for about 30 seconds.
- Add spinach and cook until wilted, about 3 minutes.
- Season spinach with lemon juice, salt, and pepper.
- Plate the butternut squash purée, top with scallops, and serve with sautéed spinach.
