Instructions:
- Preheat a non-stick skillet over medium heat and add olive oil.
- Chop the onion and sauté until translucent.
- Add spinach and halved cherry tomatoes, cooking until spinach wilts.
- Beat eggs in a bowl, season with salt and pepper, and pour over the vegetables.
- Cook until the edges set, then transfer to a preheated oven at 180°C for 5 minutes to finish cooking.
- Garnish with fresh basil before serving.
