Grilled Beef Skewers with Chimichurri and Roasted Vegetables
Instructions:
  1. Cut the beef sirloin into cubes and season with salt and black pepper.
  2. Thread the beef cubes onto skewers, alternating with pieces of red bell pepper, zucchini, and red onion.
  3. In a bowl, mix olive oil, minced garlic, chopped parsley, red wine vinegar, oregano, salt, and black pepper to make the chimichurri sauce.
  4. Preheat the grill to medium-high heat.
  5. Grill the skewers for about 10-12 minutes, turning occasionally until the beef is cooked to your liking.
  6. Serve the skewers with a generous drizzle of chimichurri sauce.
