Preparation Time: 90 minutes
Instructions:
- Preheat the oven to 180°C.
- Season the pheasant breasts with salt and pepper.
- Heat olive oil in a pan over medium heat and sear the pheasant breasts until golden brown on both sides.
- Transfer the pheasant to a baking dish and roast in the oven for about 20 minutes or until cooked through.
- In the same pan, add chopped onion and garlic, sauté until translucent.
- Add cumin seeds, coriander seeds, and cinnamon stick, cook for another minute.
- Add chicken stock and bring to a boil.
- Stir in couscous, cover, and remove from heat. Let it sit for 5 minutes.
- Fluff the couscous with a fork and mix in chopped figs, walnuts, and parsley.
- Serve the roasted pheasant on a bed of fig and walnut couscous.
