Exotic Spiced Monkfish with Black Rice and Grilled Artichokes
Instructions:
  1. Preheat the oven to 200°C.
  2. Rinse the black rice under cold water and cook according to package instructions.
  3. Clean and trim the artichokes, then cut them in half.
  4. In a bowl, mix olive oil, juice of the lemon, minced garlic, cumin, paprika, coriander, salt, and black pepper.
  5. Marinate the monkfish in half of the spice mixture for at least 30 minutes.
  6. Toss the artichokes in the remaining spice mixture.
  7. Grill the artichokes on a hot grill pan until tender and slightly charred.
  8. Place the marinated monkfish on a baking sheet and bake for 15-20 minutes until cooked through.
  9. Serve the monkfish over a bed of black rice with grilled artichokes on the side.
