Buckwheat and Butternut Squash Bowl
A hearty bowl with roasted butternut squash, buckwheat, and a tangy pomegranate dressing.

Cooking Time: 40 minutes
Instructions:
- Preheat oven to 200°C.
- Cut the butternut squash into 2cm cubes.
- Thinly slice the onion and mince the garlic.
- Place the squash, onion, and garlic on a baking tray.
- Drizzle with olive oil, sprinkle with salt and pepper, and toss to combine.
- Roast for 35 mins, or until tender and slightly caramelized, turning half way.
- Cook the buckwheat according to package instructions.
- In a bowl, combine the cooked buckwheat and roasted vegetables.
- Sprinkle with pomegranate seeds.
- Serve warm.
