Smokin' Good Chicken: A Flavor Adventure on Your Grill!

Smokin' Good Chicken: A Flavor Adventure on Your Grill!

21 November 2025

Hey there, fellow food fanatics! Ever dreamt of chicken so packed with flavor, it'll make your taste buds sing? Well, grab your aprons and fire up your grills because we're diving headfirst into the world of smoked chicken!

I recently got my hands on a Traeger wood pellet grill, and let me tell you, it's been a game-changer. Forget bland, boring chicken; we're talking about a flavor explosion that'll have everyone asking for seconds (and maybe thirds!).

I took two plump 4lb chickens, and gave them a spa day, not really a spa day more a spice rub. First, I whipped up a killer spice blend and mixed it with some butter (because, well, butter!). Then, I went to town, massaging this goodness all over and under the skin of those chickens. Think of it as a pre-smoke flavour infusion!.

Next, it was time for the main event: the Traeger. I placed those beauties onto the grill at 350°F, and let the magic happen for about an hour and a half. The best part? The Traeger has two temperature probes so I didn't have to keep opening the lid, letting all that precious smoke escape. I used hickory BBQ hardwood pellets for an authentic smokey flavour. The aroma was simply intoxicating!.

And the taste? Woah! The smoked flavor was absolutely unreal. It was like nothing I've ever tasted. I shredded some of the chicken for sandwiches, and it was the perfect combination of smoky, juicy, and utterly delicious. Trust me, once you go smoked, you'll never go back!

Want to recreate this smokey sensation? Here's the lowdown:

Ingredients

  • Spice Blend:
    • 2 tablespoons chili powder
    • 2 tablespoons brown sugar
    • 1 tablespoon salt
    • 1 tablespoon ground black pepper
    • 1 tablespoon ground mustard
    • 1 tablespoon cumin
    • 1/2 tablespoon cumin
    • 1/2 tablespoon garlic powder
    • 1/2 tablespoon onion powder
    • 1/2 tablespoon paprika
    • 1/2 teaspoon cayenne pepper
  • Chicken:
    • 1/2 cup butter, melted
    • Two 4lb whole chickens

Instructions

  1. In a bowl, mix all the spice blend ingredients. In another bowl, combine about 2 tablespoons of the spice blend with the melted butter.
  2. Rub the butter mixture all over the chickens, under the skin and on top. Then, sprinkle the remaining spice blend on top of the chickens.
  3. Fire up your Traeger on Smoke with the lid open until the fire is established (about 4-5 mins). Then, set the temperature to 350°F and preheat with the lid closed for 10-15 minutes.
  4. Place the chickens on the grill.
  5. Roast until the internal temperature reaches 165°F (about 1.5 hours). Let it rest for 15-20 mins before carving. Then, dig in!
