Light & Delicious Chicken Egg Rolls
Prep Time: 15 minutes Cook Time: 15 minutes Total Time: 30 minutes Servings: About 14 egg rolls
Ingredients
- 1 lb ground chicken
- Garlic powder (to taste)
- Ground ginger (to taste)
- Salt (to taste)
- Ground black pepper (to taste)
- 2 cups shredded cabbage
- 1 cup shredded carrot
- 1 green onion, sliced
- 14 egg roll wrappers
- 1 tablespoon cornstarch mixed with 1/4 cup cold water
- 1 quart vegetable oil for frying
Instructions
- Get your wok or large skillet hot and lightly oiled over high heat. Add the ground chicken and break it up using a spatula until its no longer pink. Lower the heat and add in the cabbage and carrots and stir fry for a couple of minutes until softened. Season with garlic powder, ginger, salt, and pepper. Don't over spice, and season well.
- Heat your oil in a deep fryer or large pot to 375 F. Meanwhile, layout an egg roll wrapper on a flat surface. Add about 2 tablespoons of filling into the corner of the wrapper, making sure its not touching the edge. Fold the corner over about half way up. Next fold the left and right corners to the middle. Using a brush, or spoon, apply the cornstarch/water mixture to the wrapper edges, and roll it all up tightly. Repeat until you run out of filling or egg roll wrappers.
- Carefully add the egg rolls to the hot oil in batches, turning often until golden brown. Remove and place onto paper towels to drain.
- Serve immediately with your favorite dipping sauce, and enjoy!
