Sweet and Sour Sauce:
- ½ cup ketchup
- 1 teaspoon soy sauce
- ⅓ cup white vinegar
- ½ cup brown sugar
- 1 cup white sugar
- ¾ cup unsweetened pineapple juice (or water)
- 3 tablespoons cornstarch
Chicken:
- 1 cup all-purpose flour
- 1 cup cornstarch
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- ½ teaspoon garlic powder
- 2 teaspoons sugar
- 1 ⅓ cups cold water
- 1 teaspoon sesame oil
- Peanut oil (for frying)
- 8 boneless, skinless chicken breasts (cut into bite-sized pieces)
Instructions:
- In a medium saucepan, combine ketchup, soy sauce, vinegar, brown sugar, and white sugar. In a separate cup, whisk together pineapple juice (or water) with cornstarch until smooth. Whisk into the ketchup mixture.
- Bring to a boil over medium-high heat, stirring constantly until bubbly. Remove from heat and let cool.
- To prepare the chicken: In a large bowl, combine flour, cornstarch, baking powder, baking soda, and garlic powder. Add water and sesame oil. Whisk until smooth. Add chicken pieces and mix well to coat.
- Heat peanut oil in a deep-fryer to 375°F (190°C). Fry battered chicken in batches until golden brown and cooked through (about 5-6 minutes).
