Sure, you can eat them straight up, but where's the fun (and flavour) in that? If you're anything like me, you crave a little culinary excitement, even on a weeknight.

Pinto Bean Transformation: A Step-by-Step Guide

Ready to turn those humble beans into a culinary superstar? Let's go!

Step 1: Drain and Rinse

Open that can with a proper can opener and drain all the liquid in the can, that stuff is not your friend. Tip those beans into a colander and give them a good rinse under cold water. We're washing away excess sodium and any 'canned' residue, this is the first step to flavour town.

Step 2: Flavour Infusion

This is where the magic happens! Forget bland, we're going bold! Here are some of my favorite options for seasoning:

  • Classic Combo: A little garlic, onion, salt, and pepper goes a long way.
  • Herby Goodness: Freshly chopped herbs like cilantro, parsley, or thyme add a burst of freshness.
  • Spice It Up: A dash of smoked paprika, cumin, or chili powder will turn up the heat.
  • Extra Richness: A splash of broth, a knob of butter, or a drizzle of olive oil can add depth.
  • Sweet & Savory: A touch of brown sugar, a little hot sauce and perhaps some crispy bacon pieces can take you to the next level.

We aren't really cooking as they are already cooked, just reheating and adjusting the texture.

  • Microwave Magic: For a quick fix, combine your beans and flavourings in a microwave-safe dish, cover and microwave for 6-8 minutes.

Recipe for Re-Cooked Canned Pinto Beans

This recipe is for two servings but can be easily scaled up or down.

Ingredients:

  • 1 can pinto beans, drained and rinsed
  • ½ cup water or broth
  • 1 clove garlic, minced
  • 1 slice bacon, cut into pieces
  • ¼ cup yellow onion, chopped
  • 1 tbsp unsalted butter
  • 1 tbsp olive oil
  • ½ tsp hot sauce
  • ½ tsp sugar
  • ½ tsp black pepper
  • Salt to taste

Instructions

  1. In a saucepan over a medium heat, add the olive oil, then saute the onion and garlic for a couple of minutes until fragrant. Add the bacon and cook till softened
  2. Add the rinsed pinto beans, water or broth, butter, hot sauce, sugar and black pepper. Stir to combine.
  3. Bring the mixture to a gentle simmer, stirring occasionally for about 10 to 15 mins
  4. Taste and adjust seasoning with salt as needed.
