For the protein, you might like to add some pan fried cubed tofu or perhaps some vegan sausage if you have some available.

Here's a basic template for my Feel-Good Keto Quiche:

Ingredients:

  • 6 large eggs (the base of our protein-packed quiche)
  • 1/2 cup unsweetened almond milk or coconut milk (for a creamy texture)
  • 1 cup of your favourite keto friendly cheese, shredded (cheddar, mozzarella, or a blend works great)
  • 1 cup of mixed veggies, such as chopped spinach, sautéed mushrooms, diced bell peppers etc
  • 1/2 cup of vegan protein of your choice, cubed or crumbled
  • Salt, pepper, and any other spices you enjoy (a touch of nutmeg is lovely)

Instructions:

  1. Preheat your oven to 375°F (190°C). Lightly grease a pie dish or baking dish.
  2. In a large bowl, whisk the eggs and milk together until well combined. Season with salt, pepper, and your preferred spices.
  3. Stir in the cheese, veggies, and protein.
  4. Pour the mixture into the prepared dish.
  5. Bake for 30-35 minutes, or until the quiche is set and golden brown.
  6. Let it cool slightly before slicing and serving.
