For the Soft GF Tortillas: (makes 10)

  • 120 g / heaped ½ cup buckwheat or chickpea flour
  • ¼ cup tapioca starch
  • ¼ cup rice flour
  • 2 tbsp ground chia seeds (or flax seeds)
  • 1/3 tsp baking powder
  • ½ tsp salt
  • 4 tsp olive oil (any oil will do)
  • approx. 3 tbsp water

For the Wheat Tortillas: (makes 10)

  • 120 g / heaped ½ cup white all-purpose flour
  • 4 tsp olive oil (any oil will do)
  • 1/3 tsp baking powder
  • ½ tsp salt
  • approx. 120 ml / ½ cup hot water

Method

  1. Let's Start Scrambling: Heat olive oil in a non-stick pan over medium heat. Add garlic and spring onions. Fry until fragrant and soft. Add tomatoes, cut side down, and fry gently until they release some of their juices. Move aside.
  2. Tofu Time: Add the silken tofu to the pan and break it into small pieces with a fork. Sprinkle with turmeric and black salt. Fry for another 2 minutes to heat through. Taste and adjust seasoning.
  3. Tortilla Time Make your choice of tortillas using the recipes provided below. Alternatively use store-bought ones.
  4. Assemble Your Tacos: Pile the tofu scramble and black beans onto your warm tacos. Add avocado slices, black pepper, spring onion and chilli paste. Eat immediately and get ready for another!
