Plus, there's a lot of scope to make this one your own with your favourite toppings. Speaking of toppings, this is where it gets really fun. We're talking a rainbow of seasonal fruits – think juicy mangoes, ripe peaches, plump plums. And of course, a generous drizzle of maple syrup because, well, why not?

Here's what you'll need:

Ingredients:

  • 125g (1 cup) quinoa flour
  • 1 tsp gluten-free baking powder
  • ½ tsp gluten-free baking soda
  • 240ml (1 cup) plant milk of choice
  • 2 tsp lemon juice
  • 4 tsp maple syrup
  • 1 tbsp mild coconut oil for frying

  • Remember you can always make your own quinoa flour by grinding raw quinoa seeds in a coffee or spice grinder.
