I don't know about you but the moment the leaves start to turn, I get this crazy craving for all things warm and cozy. That’s why I’ve created these Vegan Spiced Plum Pancakes. They are a bit of a departure from the traditional, but trust me, they're an absolute game-changer for breakfast.

For the Pancakes:

  • ½ cup sifted plain flour
  • ½ cup sifted wholemeal flour
  • 2 tbsp smooth almond butter
  • Pinch of salt
  • ½ tsp baking powder
  • 1 ½ level tsp baking soda
  • 3 tbsp maple syrup
  • 1 tbsp lemon or lime juice (or vinegar)
  • ½ cup full-fat coconut milk
  • ½ - ¾ cup water (add until desired consistency)
  • 1 level tbsp cinnamon
  • 1 tbsp oil for frying (sunflower or coconut)

For the Spiced Plum Topping:

  • 5 fresh plums, quartered
  • 2 tbsp maple syrup
  • 1 star anise
  • 1 cinnamon bark
  • 2 cloves
  • Grate of nutmeg
  • ½ vanilla pod, seeds scraped
  • 1 whole allspice

Let's get cooking!

Pancake Magic:

  1. In a mixing bowl, whisk together the sifted flours, salt, baking soda, and baking powder.
  2. In a separate bowl, combine the wet ingredients: coconut milk, ½ cup of water, maple syrup, and lemon juice. Whisk until smooth.
  3. Gradually pour the wet ingredients into the dry, stirring gently with a hand whisk until just combined. Add more water if needed for desired consistency ( I added an extra 60ml )
  4. Heat your frying pan over medium heat and brush with a bit of oil.
  5. Ladle 2 tablespoons (or 1/8 cup) of the batter per pancake. Shape into a circle with the back of a spoon.
  6. Cook until bubbles form and start to burst. Flip and cook until golden brown. Keep warm in the oven while you make the rest.

Spiced Plum Bliss:

  1. Place the quartered plums in a pot with all the spices, maple syrup, and ¼ cup of water.
  2. Stew over low heat, covered, until the plums have softened.
  3. Remove the plums and set aside. Gently reduce the juices until a thick syrup is formed.
  4. Sieve the syrup for a smoother consistency or serve as is, removing any whole spices.
