- 2 tbsp smooth almond butter
- Pinch of salt
- ½ tsp baking powder
- 1 ½ level tsp baking soda
- 3 tbsp maple syrup
- 1 tbsp lemon or lime juice (or vinegar)
- ½ cup full-fat coconut milk
- ½ - ¾ cup water (add until desired consistency)
- 1 level tbsp cinnamon
- 1 tbsp oil for frying (sunflower or coconut)
For the Spiced Plum Topping:
- 5 fresh plums, quartered
- 2 tbsp maple syrup
- 1 star anise
- 1 cinnamon bark
- 2 cloves
- Grate of nutmeg
- ½ vanilla pod, seeds scraped
- 1 whole allspice

- Ladle 2 tablespoons (or 1/8 cup) of the batter per pancake. Shape into a circle with the back of a spoon.
- Cook until bubbles form and start to burst. Flip and cook until golden brown. Keep warm in the oven while you make the rest.

- Place the quartered plums in a pot with all the spices, maple syrup, and ¼ cup of water.
- Stew over low heat, covered, until the plums have softened.
- Remove the plums and set aside. Gently reduce the juices until a thick syrup is formed.
- Sieve the syrup for a smoother consistency or serve as is, removing any whole spices.
