Have you ever found yourself in the labyrinth of sweeteners, trying to decipher which ones are actually good for you? Well, buckle up, because I've stumbled upon a true gem: date syrup, or as it's lovingly called in the Middle East, 'Silan.'

It all started with a quest – a quest for a sweetener that wouldn't make me feel like I'm trading taste for a sugar crash. Then, like a foodie mirage, date syrup appeared. Made purely from dates and water, this ruby-red liquid is more than just a sweetener; it's a flavour adventure!

Why Date Syrup Is My New Best Friend

Let's be honest, we've been told that some sugars are better than others, right? But a lot of the time it is just clever marketing. It turns out many of those 'healthy' liquid sweeteners are just as nutritionally bankrupt as regular white sugar – cue the dramatic music! Maple syrup and honey? Sadly, they don't win many points in this race either. Enter date syrup! While it doesn't have all the nutrients of the whole date, it still packs more minerals than most other liquid sweeteners, especially potassium and calcium.

Ready to whip up your batch of Silan? Here’s how:

Ingredients:

  • 500g (1 lb) dried pitted dates (the humble Deglet Nour variety is perfect)
  • 1 litre (4 cups) water

Method:

  1. Chop those dates roughly – they're about to get a spa day.
  2. Soak them in boiling water for 20 minutes to get rid of any impurities, then say goodbye to that water.
  3. Toss the dates in a large pot with 1 litre of fresh water, bring to a gentle simmer, cover, and let them bubble away for 1-2 hours. (Go for 2 if you have the time, they will thank you!)
  4. Cool completely – patience is a virtue.
  5. Place a sieve over a large bowl, line it with cheesecloth (or a nut bag if you have one), and squeeze all that liquid from those cooked dates like your life depends on it (small batches work best here).
  6. Pour the date juice into a pot, simmer uncovered for about 45-60 minutes, until it reduces by half, and gets thicker.
  7. Dip a spoon – the syrup should coat the back nicely. Thicker when cool.

Note: Don't over-reduce or you might end up with date toffee instead!
