Recipe: Vibrant Vegan Fajita Bowls
Ingredients:
- 1 portion of easy vegan fajita filling
- 2 small sweet potatoes, cubed
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- ¼ teaspoon cayenne pepper
- 1-2 ears of corn or a tin of corn
- 1-2 ripe avocados
- 2 limes, juice of
- Small bunch of coriander, finely chopped
- A wedge of red cabbage, finely shredded
- 1 can of red kidney beans, drained
- 1 cup brown rice or quinoa, cooked
Method:
- Prepare your awesome vegan fajita filling following my previous recipe.
- Preheat the oven to 220°C (425°F). Toss the cubed sweet potatoes with 1 tablespoon of olive oil, salt, smoked paprika, cumin, and cayenne pepper.
- Spread the sweet potatoes on a large baking tray and roast for 30 minutes, flipping halfway through. The roasted sweet potatoes should be nicely tender and caramelised.
- If you're using fresh corn, lightly coat it in a little oil and grill it on a griddle pan for a delicious charred flavour.
- Mash the avocado with a fork, then season with lime juice, salt, and pepper. Set aside this lovely guacamole.
- Dress the shredded cabbage with a small amount of olive oil and a squeeze of lime juice, and then mix in the chopped coriander. Season to taste.
Assembly:
- Divide all of the prepared ingredients evenly into four bowls, or assemble as needed throughout the week. Be creative with your layers, making it as colourful and enticing as you can.
Notes
*Feel free to add or substitute any veggies you like, such as bell peppers, zucchini, or onions. *To make it even quicker, use pre-cooked rice or quinoa. *Store any leftover components separately in airtight containers in the fridge for up to 3 days.
