I've always been a bit of a granola fiend, but sometimes all that oil and refined sugar leaves me feeling like I need a nap more than a burst of energy. So, I put on my thinking cap (and my apron) and came up with not one, but two healthier versions that are seriously addictive.

The Magic of Aquafaba

First up, we have a recipe that harnesses the power of aquafaba – yes, that's the liquid from a can of chickpeas! It's like a vegan egg white substitute, giving our granola that perfect crispiness without any added oil. Just mix it with a touch of maple syrup, and you’ve got a sweet, crunchy base ready to hug your favorite nuts, seeds, and oats. It's like a magic trick, but in your kitchen!

Nutty Delight

Next, for the slightly more indulgent side of things (but still totally guilt-free!), I've added a dollop of almond butter to the mix. Peanut butter or tahini would also be heavenly. This version has a richer, nuttier flavour and, let’s be honest, who can say no to a little nut butter? It’s a brilliant way to sneak in some healthy fats without compromising on the satisfying crunch.

Oil-Free Aquafaba Granola

Ingredients:

  • 1 cup rolled jumbo oats
  • 1/2 cup raw buckwheat groats
  • 1/4 cup raw pumpkin kernels
  • 1/2 cup flaked or silvered almonds
  • 1/4 cup dried unsweetened cranberries, chopped
  • 1/2 tsp cinnamon
  • Pinch of sea salt
  • 4 tbsp aquafaba
  • 1/4 cup maple syrup

Method:

  1. Preheat the oven to 320°F (160°C) and line a baking tray with parchment paper.
  2. Mix all dry ingredients in a large bowl (except for the cranberries).
  3. In a separate bowl, whisk together the aquafaba and maple syrup until smooth.
  4. Combine wet and dry ingredients. Spread evenly on the baking tray.
  5. Bake for 30-35 mins, stirring every 15 minutes, and adding cranberries in the last 10 minutes.
  6. Cool completely before storing in an airtight container.

Oil-Free Nut Butter Granola

Ingredients:
