Ingredients:
- 2-3 tbsp olive oil, divided
- 1 small onion, finely diced
- 4 garlic cloves, finely diced
- 3 cans (14 oz each) cannellini beans, drained
- 1 cup soy milk (or other plant milk)
- 2 tbsp nutritional yeast (optional)
- Salt and black pepper to taste
- ½ cup shop-bought onion chutney
- 2 tbsp quality balsamic vinegar
- 2 tsp maple syrup
- 1 block of firm tofu
For the rosemary oil:
- ⅓ cup extra virgin olive oil
- 0.3 oz rosemary leaves, finely chopped
Instructions:
- In a large frying pan, heat 2 tbsp of olive oil over medium heat. Add the diced onion and sauté for 5-10 minutes, then add the garlic. Cook until fragrant and softened, but not browned.
- Season with salt and pepper, add the drained cannellini beans (mash some with a fork for a creamier texture), and pour in the soy milk and nutritional yeast (if using). Stir well and season again.
- Simmer on low-medium heat, stirring occasionally, until the mixture thickens and becomes creamy.
- While the beans are simmering, heat 1 tsp of olive oil in a separate pan. Cut the tofu block into 1/2 inch cubes. Add to the pan and pan-fry them until golden and slightly crispy.
- Remove tofu from the pan. Add the onion chutney, balsamic vinegar, and maple syrup to the same pan and simmer for a few minutes, until it thickens and caramelizes.
- Divide the hot beans between bowls, top with the golden crispy tofu, and spoon over the balsamic onion chutney, finishing off with a drizzle of rosemary oil.

- Finely chop the rosemary leaves.
- Heat the olive oil in a small pot until it shimmers gently, remove from the heat and add the chopped rosemary leaves. They should sizzle but not turn brown.

Notes:
- For a mellower garlic flavour, add some roasted garlic cloves blended into the beans.
- You can use dry cannellini beans. Soak overnight, cook with a piece of kombu, and use 25 oz cooked beans in place of the canned beans.
- If you don't have onion chutney, a drizzle of balsamic reduction will work beautifully.
