This recipe is a vibrant twist on a classic, transforming simple hummus into something extraordinary. Ingredients:
- 2 cups cooked chickpeas (1 cup dry)
- 2 medium beetroots
- 1 garlic clove, pressed
- ½ tsp fine sea salt, adjust to taste
- 2 tsp ground cumin
- 2 tbsp tahini
- Juice of 1 small lemon
- ½ cup water (approximate)
- Fresh pepper to taste
- 1-2 tbsp extra virgin olive oil (optional, for serving)
- Sesame seeds (optional, for serving)
Method:
- Preheat your oven to 200°C (400°F).
- Wash the beetroots, wrap each in foil with a tablespoon of water, and bake for 45-60 minutes, or until soft enough to pierce with a knife. Let them cool, but save the beet juice that collects at the bottom of the foil!
- Once cool, peel the beetroot with your fingers and slice them.
- In a food processor, combine the chickpeas, sliced roasted beetroot, reserved beet juice, minced garlic, tahini, lemon juice, cumin, salt, and pepper.
- Process until smooth. If the mix is too dry, add water, a tablespoon at a time. For a smoother consistency, use a blender, but be aware it can be a little tricky because of the thickness of the mix.
- Taste and adjust seasoning as needed. Serve with fresh bread, veggie sticks, or as part of a colourful mezze platter.
