Beetroot Hummus: A Vibrant Vegan Delight

Okay, confession time. As a kid, I was not a fan of beetroot. It was the sad, soggy, grey beetroot salads of my youth, a culinary crime against vegetables! But oh, how things have changed! My taste buds have done a 180 and now I'm on a mission to sneak beetroot into everything! Get ready for some pink perfection!

This recipe is a vibrant twist on a classic, transforming simple hummus into something extraordinary. The earthy sweetness of beetroot pairs perfectly with the creamy chickpeas, tangy lemon, and warm spices. It's not just a dip, it's a flavour explosion! This vibrant beetroot hummus is amazing on fresh or toasted bread, or try it in a veggie wrap for a healthy and delicious meal.

Prep time: 30 minutes Cook time: 60 minutes Serves: 4

Ingredients:

  • 2 cups cooked chickpeas (1 cup dry)
  • 2 medium beetroots
  • 1 garlic clove, pressed
  • ½ tsp fine sea salt, adjust to taste
  • 2 tsp ground cumin
  • 2 tbsp tahini
  • Juice of 1 small lemon
  • ½ cup water (approximate)
  • Fresh pepper to taste
  • 1-2 tbsp extra virgin olive oil (optional, for serving)
  • Sesame seeds (optional, for serving)

Method:

  1. Preheat your oven to 200°C (400°F).
  2. Wash the beetroots, wrap each in foil with a tablespoon of water, and bake for 45-60 minutes, or until soft enough to pierce with a knife. Let them cool, but save the beet juice that collects at the bottom of the foil!
  3. Once cool, peel the beetroot with your fingers and slice them.
  4. In a food processor, combine the chickpeas, sliced roasted beetroot, reserved beet juice, minced garlic, tahini, lemon juice, cumin, salt, and pepper.
  5. Process until smooth. If the mix is too dry, add water, a tablespoon at a time. For a smoother consistency, use a blender, but be aware it can be a little tricky because of the thickness of the mix.
  6. Taste and adjust seasoning as needed. Serve with fresh bread, veggie sticks, or as part of a colourful mezze platter.
